Of late I noticed that I have not blog any mutton recipe so I decided and took out some time today to blog one of my family favourite and all time favourite mutton recipe. Let’s learn today how to make Mutton Chukka with step by step pictures.

Mutton Chukka is a chettinad cuisine from the Chettinad region of Tamil Nadu state in South India. The word Chukka means dry curry. Mutton chukka is well known for its spiciness. This is a dry preparation of mutton and is strongly flavored with spices and masalas.

Mutton chukka is a very popular dish and can find in almost all restaurant menus in South. It serves as a great side dish for your meal or even good as a starter since it a dry dish. This dish is my husband’s favourite chakna to have it with his drinks. I love to have this mutton chukka with rice, sambar or dal a long with some stir fry vegetables. It is equally good and delicious to have it with roti, chappati or any flat bread.

The recipe of mutton chukka slighly varies from region to region. Some marinate the meat with some masalas before cooking it, some pressure cook the meat first and then fry with the spices and masalas. Some add coconut and some don’t. So you will come across slight variation in the recipe of mutton chukka. This variation might happen due to the unavailable of ingredients or cooking preferences of the people.

Here I have used homemade roasted masalas which I used to roast, grind and store them. If your masalas are not roasted you can dry roast the spices used in the recipe like cumin, coriander, pepper, fennel etc. Since my meat was tender, I have not pressure cooked the meat instead directly fry the spices and cooked the meat along with the spices till the meat is tender.

  • Preparation time : 15 mins
  • Cooking time : 40-45 mins
  • Serves : 3

Ingredients:

  • 400 gms Mutton cubes
  • 2 tbsp Oil
  • 1 tsp Cumin seeds
  • 1 medium Cinnamon stick
  • 3 Cardamom
  • 3 Cloves
  • 1 bay leaf
  • 1 large Onion finely chopped
  • 1 large tomato finely chopped
  • 3 Dry Red Chilly broken
  • 2 tsp Ginger Garlic paste
  • 1 tsp Turmeric powder
  • ½ tsp roasted cumin powder
  • 1 tsp roasted coriander powder
  • 1 tsp roasted fennel powder
  • 1 tsp Red Chilly powder
  • 1 tsp Garam Masala powder
  • 1 tsp Pepper powder
  • 1 sprig Curry leaves
  • Salt to taste
  • Water as required
  • Few chopped coriander leaves

Method :

In a pan heat the oil. Add in the cumin seeds, cinnamon, cardamom, cloves, bay leaf and let it crackle.

Add in onion, dry chillies, ginger garlic paste, curry leaves and saute for 2 mins.

Add mutton, salt to taste and mix well.

Cover the pan and cook in medium heat for 10-15 mins stirring it occasionally till the water released by mutton evaporates.

Add chopped tomatoes and cook till it turns mushy.

Add the turmeric powder, cumin powder, fennel powder, coriander powder, garam masala powder, red chilly powder, pepper powder, mix well and cook for a min.

Add required water, cover the pan and cook in medium heat till the mutton is cooked completely. Mine took 40-45 mins.

Cooking time will differ depending upon the tenderness of your meat. Add water little at a time and cook till the meat is tender and cooked completely.

Add chopped coriander leaves, cook for a mins or two in high heat and take off the heat.

Enjoy it as a side dish with your meal or your favourite drink.
