Black is beautiful, isn’t it? Who all agrees with me? It’s a big yes from me and I am in love with this beauty. Today I am sharing a recipe Black Rice Chicken Risotto which is a very healthy dish and is easy to make and taste divine. A very rich, flavorful and scrumptious dish.
Black Rice has got a very aromatic flavour and slightly Nutty flavour in taste.
Black Rice also known as forbidden rice or purple rice is a superfood with lots of nutritional and health benefits. Some of which are – rich in antioxidants, natural dexotifier, good source of fiber, preventing risk of diabetes, preventing risk of obesity, richer protein content and better heart health.
It is loaded with anti-oxidants especially anthocyanin which is great for diabetics, heart patients and helps brain activity. Its great for skin and hair due to its Vitamin e content. It is also loaded with fibre so it does not spike blood sugar levels. Its rich in iron, hence a good source for vegetarians.

Preparation time : 10 mins plus soaking rice time
Cooking time : 30 mins
Serves : 2-3
Ingredients:
1 cup Black Rice soaked overnight
100 gms boneless Chicken cubes
2+2 tbsps Olive oil
1 tbsp Butter
2 tbsps parmesan cheese garted
2 fat Garlic cloves chopped
½ tsp Pepper powder
Salt to taste
Dried basil for seasoning
1 Onion sliced
Water 2 cups
Method :
Heat a pan, add 2 tbsps Olive oil, 2 Garlic Cloves Chopped and Saute for a min.
Add 100 gms boneless Chicken cubes, ½ tsp pepper powder, season with salt and dried basil.
Stir fry for 8-10 mins till golden and keep aside.
Heat a pan, add 2 tbsps Olive oil, 1 onion sliced and saute till onion turns soft.
Add 1 cup overnight soaked black rice and saute for 5 mins stirring it continously.
Season with salt and add 2 cups water.
Cover the pan and cook till the rice is cooked and water dries up. Add more water if required.
Add the chicken, 1 tbsp butter, 2 tbsps grated parmesan cheese, mix well and take off the heat.
